Soak 1 ½ cups of Kamut wheat in water for 4 to 6 hours or overnight. Drain. Transfer soaked wheat to a medium saucepan and cover with 5 cups of hot water and ½ tsp salt. Bring to a boil over high heat, then reduce to medium. Simmer about 15 minutes, or until wheat is softened, but still firm and chewy in texture. Drain and rinse thoroughly with cold water. Serve with plain yogurt and a selection of assorted fruits and nuts. Add a sprinkling of brown sugar for sweetness.
Serving Suggestions for Ashoura: mango, banana, kiwi, berries, peach, cantaloupe, apple, orange, figs, dates, toasted chopped pecans, toasted coconut, sunflower and pumpkin seeds, trail mix or any combination of tropical or in-season favourites.
Where to Find it: Look for Kamut, along with other varieties of whole wheat, in bulk food stores.
