marinades

Chilli Garlic Rub for Chicken
4 large cloves garlic
2 tsp kosher salt
1 tbs pure mild red chilli powder
2 tsp ground cumin
3 tbs butter, softened

Mash garlic together with salt in a mortar and pestle. Add chilli powder, cumin and butter and combine into a paste. Rub under and on top of the skin of a whole chicken (also inside the cavity) and roast, (or rub on drums, thighs and breast pieces and grill).

Mediterranean Marinade
¼ cup fresh lemon juice
½ cup olive oil
1 tsp hot pepper flakes
½ tsp coarsely ground black pepper
½ tsp kosher salt
½ tsp lemon zest
4 cloves garlic, crushed
1 shallot, finely diced
¼ cup fresh parsley, finely chopped (or 2 tsp dried)
2 tbs each fresh basil and oregano, finely chopped (or 1 tsp dried of each)

Whisk together lemon juice, olive oil, pepper flakes, pepper and salt. Add lemon zest, garlic and herbs. Use to marinate meat, chicken, fish or vegetables, setting aside some for basting.
