marinated artichoke and chicken salad

1 cup marinated artichoke hearts, diced
2 cups chicken breast, diced
2 tbs Golden Italian Dressing
salt/pepper to taste

Toss together artichoke hearts and chicken with dressing. Salt and pepper to taste. Refrigerate for half an hour to allow flavours to develop. Serve with slices of baguette or other artisan bread.

Where to find it: The best ever marinated artichokes are from Costco, I kid you not. Sure, the jar is huge. But put them on pizza, pasta, toast. Eat them with a fork or you fingers. Buy a jar with a friend. Whatever. Just buy them. It’s worth it, I tell you.
