1 shallot, finely diced
½ cup grape seed oil
¼ cup olive oil
1/3 cup apple cider vinegar
1/3 cup red wine vinegar
¾ cup maple syrup
2 tbs grainy Dijon mustard
salt/pepper
Whisk together in a medium bowl until ingredients are combined. Transfer to a salad dressing bottle. Shake before serving. Keep refrigerated.
